Mediterranean Spaghetti Salad 

Ingredients

  • 12 oz spaghetti (regular or protein pasta)
  • 1½ cups cherry tomatoes, halved (mix colors if possible)
  • 1 English cucumber, diced
  • ½ cup mixed olives (Kalamata + green), sliced
  • ⅓ cup red onion, finely diced
  • ½ cup feta cheese, crumbled
  • 2 tbsp fresh parsley, chopped (optional)

Dressing

  • ⅓ cup extra virgin olive oil
  • 3 tbsp red wine vinegar
  • 1 tbsp lemon juice
  • 2 garlic cloves, minced
  • 1 tsp dried oregano
  • ½ tsp salt
  • ¼ tsp black pepper

Instructions

  1. Cook pasta
    Boil spaghetti in salted water until al dente. Drain and rinse under cold water to cool completely.
  2. Prep vegetables
    Chop tomatoes, cucumber, red onion, and olives. Set aside.
  3. Make dressing
    In a bowl, whisk olive oil, red wine vinegar, lemon juice, garlic, oregano, salt, and black pepper until well combined.
  4. Combine salad
    In a large bowl, add cooled pasta, vegetables, and olives. Pour dressing over and toss well.
  5. Add feta
    Gently mix in feta cheese and parsley.
  6. Chill & serve
    Refrigerate for 30 minutes before serving for best flavor.

Serving Tip

Serve cold as a main meal or side dish with grilled chicken, fish, or kebabs.
