Mediterranean Spaghetti Salad
Ingredients
- 12 oz spaghetti (regular or protein pasta)
- 1½ cups cherry tomatoes, halved (mix colors if possible)
- 1 English cucumber, diced
- ½ cup mixed olives (Kalamata + green), sliced
- ⅓ cup red onion, finely diced
- ½ cup feta cheese, crumbled
- 2 tbsp fresh parsley, chopped (optional)
Dressing
- ⅓ cup extra virgin olive oil
- 3 tbsp red wine vinegar
- 1 tbsp lemon juice
- 2 garlic cloves, minced
- 1 tsp dried oregano
- ½ tsp salt
- ¼ tsp black pepper
Instructions
- Cook pasta
Boil spaghetti in salted water until al dente. Drain and rinse under cold water to cool completely. - Prep vegetables
Chop tomatoes, cucumber, red onion, and olives. Set aside. - Make dressing
In a bowl, whisk olive oil, red wine vinegar, lemon juice, garlic, oregano, salt, and black pepper until well combined. - Combine salad
In a large bowl, add cooled pasta, vegetables, and olives. Pour dressing over and toss well. - Add feta
Gently mix in feta cheese and parsley. - Chill & serve
Refrigerate for 30 minutes before serving for best flavor.
Serving Tip
Serve cold as a main meal or side dish with grilled chicken, fish, or kebabs.
