These fluffy Protein Egg White Bites are a healthy, low-carb breakfast packed with protein and flavor. They’re soft, cheesy, easy to customize, and perfect for meal prep. Make a batch ahead of time and enjoy a quick grab-and-go breakfast all week long. Each bite is light, satisfying, and great for busy mornings, post-workout snacks, or healthy lunches.
Ingredients
- 2 cups liquid egg whites
- 4 large eggs
- 1 cup low-fat cottage cheese
- 1 cup shredded mozzarella cheese
- 1/2 cup diced bell peppers
- 1/2 cup chopped spinach
- 1/4 cup diced onions
- 1/2 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Nonstick cooking spray
Instructions
- Preheat your oven to 350°F (175°C). Lightly grease a muffin tin with nonstick spray or use silicone muffin liners for easier removal.
- In a large mixing bowl, whisk together the egg whites and whole eggs until smooth and fluffy.
- Add the cottage cheese, mozzarella cheese, bell peppers, spinach, onions, garlic powder, salt, and black pepper. Stir well until everything is evenly combined.
- Pour the mixture evenly into the prepared muffin cups, filling each about 3/4 full. The bites will puff slightly while baking.
- Bake for 22–25 minutes or until the egg bites are fully set and lightly golden on top. Insert a toothpick into the center to check doneness—it should come out clean.
- Remove from the oven and let the bites cool in the pan for about 5 minutes before carefully removing them.
Serving Ideas
Serve warm on their own or pair with avocado, salsa, fresh fruit, or whole grain toast. These egg bites also taste great chilled or reheated.
Storage
Store leftovers in an airtight container in the refrigerator for up to 5 days. Reheat in the microwave for 20–30 seconds. You can also freeze them for up to 2 months for easy meal prep breakfasts.
