- 1 small onion, diced
- 2 garlic cloves, minced
- 1 packet taco seasoning
- 1/3 cup water
Casserole Layers
- 1 can black beans, drained and rinsed
- 1 cup corn kernels
- 1 cup salsa
- 2 cups crushed tortilla chips or baked tortilla strips
- 1½ cups shredded cheddar or Mexican blend cheese
- 1 cup diced tomatoes
- ¼ cup sliced black olives (optional)
- 2 green onions, sliced
Optional Toppings
- Greek yogurt or sour cream
- Avocado slices
- Jalapeños
- Fresh cilantro
- Lime wedges
Instructions
Preheat your oven to 375°F (190°C). Lightly grease a 9×13-inch casserole dish and set aside.
In a large skillet over medium heat, cook the ground beef or turkey until browned and fully cooked. Drain any excess grease if needed.
Add the diced onion and minced garlic to the skillet. Cook for 2–3 minutes until softened and fragrant.
Stir in the taco seasoning and water. Mix well and allow the meat mixture to simmer for about 3–5 minutes until thickened and flavorful.
Spread the crushed tortilla chips evenly across the bottom of the prepared casserole dish. This creates a crunchy base layer that absorbs all the delicious taco flavor.
Spoon the taco meat mixture evenly over the chips. Add the black beans, corn, salsa, diced tomatoes, and black olives if using.
Sprinkle the shredded cheese generously over the top, covering the casserole evenly.
Bake uncovered for 20–25 minutes, or until the cheese is melted, bubbly, and lightly golden around the edges.
Remove from the oven and let the casserole rest for a few minutes before serving. Top with sliced green onions, avocado, jalapeños, cilantro, Greek yogurt, or fresh lime juice for extra flavor.
