Grilled Shrimp Lettuce Wraps with Creamy Avocado Sauce

Ingredients
- 1 lb large shrimp, peeled and deveined
- 2 tablespoons olive oil
- 1 tablespoon Cajun seasoning or freshly ground black pepper seasoning
- 8–10 large butter lettuce leaves
- 1 cup shredded red cabbage
- ½ cup diced tomatoes
- ½ cup shredded carrots
- 2 tablespoons mayonnaise or plain Greek yogurt
- 1 teaspoon fresh lime juice
For the Creamy Avocado Sauce
- 1 ripe avocado
- ¼ cup plain Greek yogurt
- 1 tablespoon lime juice
- 1 small garlic clove
- 2 tablespoons fresh cilantro
- Salt and black pepper to taste
- 1–2 tablespoons water, if needed for blending
Instructions
In a medium bowl, toss the shrimp with olive oil and Cajun seasoning until evenly coated. Let the shrimp marinate for 10–15 minutes while preparing the vegetables.
Preheat an outdoor grill or grill pan over medium-high heat. Grill the shrimp for about 2–3 minutes per side, or until they turn pink, lightly charred, and cooked through. Remove from the heat and set aside.
In a separate bowl, combine the shredded cabbage, diced tomatoes, shredded carrots, mayonnaise or Greek yogurt, and lime juice. Toss well until the vegetables are lightly coated. Chill until ready to serve.
To make the avocado sauce, blend the avocado, Greek yogurt, lime juice, garlic, cilantro, salt, and pepper until smooth. Add a splash of water if needed to achieve a creamy, drizzle-friendly consistency.
Wash and pat dry the butter lettuce leaves. Arrange them on a serving platter. Spoon a little of the crunchy slaw into each lettuce leaf, then top with several grilled shrimp. Finish with a generous drizzle of the creamy avocado sauce.
Serve immediately with fresh lime wedges and extra cilantro for garnish if desired.
