- 4 cups seedless watermelon, cut into 1½-inch cubes

- ¼ cup fresh mint leaves
- ¼ cup fresh basil leaves (optional)
- 12 wooden skewers
For the Crispy Shallots
- 3 shallots, thinly sliced
- ½ cup neutral oil

- 3 tbsp honey
- ½ tsp red pepper flakes
- 1 tbsp fresh lime juice
- 1 tsp apple cider vinegar

Method
Start by making the crispy shallots. Heat the oil in a small skillet over medium heat. Add the sliced shallots and cook for 8–10 minutes, stirring occasionally, until golden brown and crisp. Remove with a slotted spoon and transfer to paper towels. Sprinkle lightly with salt and allow them to cool completely.
Next, prepare the hot honey drizzle. In a small bowl, whisk together the honey, red pepper flakes, lime juice, and apple cider vinegar until smooth. Set aside so the flavors can blend.
Pat the watermelon and feta dry with paper towels. This helps the honey cling better and prevents excess moisture. Assemble the skewers by threading watermelon, cucumber, and feta cubes onto each skewer. Repeat the pattern if using longer skewers.
