Stuffed Spinach and Lentil Flatbreads Recipe
These soft and flavorful stuffed flatbreads are filled with a delicious mixture of spinach, lentils, and cheese. They are perfect for lunch, dinner, or a hearty snack and taste wonderful with yogurt, hummus, or a fresh salad.
Ingredients
For the Dough
- 3 cups all-purpose flour
- 1 teaspoon salt
- 1 teaspoon sugar
- 2 teaspoons instant yeast
- 1 cup warm water
- 2 tablespoons olive oil
For the Filling
- 1 tablespoon olive oil
- 1 small onion, finely chopped
- 3 garlic cloves, minced
- 2 cups fresh spinach, chopped
- 1 cup cooked lentils
- 1 teaspoon cumin
- 1/2 teaspoon paprika
- 1/2 teaspoon chili flakes (optional)
- Salt and black pepper to taste
- 1/2 cup crumbled feta cheese or shredded mozzarella
For the Garlic Butter
- 2 tablespoons melted butter or olive oil
- 1 teaspoon garlic powder
- 1 tablespoon chopped parsley
Instructions
Step 1: Prepare the Dough
In a large mixing bowl, combine the flour, salt, sugar, and instant yeast. Mix well so the ingredients are evenly distributed. Add the warm water and olive oil. Stir until the dough starts coming together. Transfer the dough to a lightly floured surface and knead for about 8–10 minutes until smooth and elastic. If the dough feels sticky, sprinkle in a little extra flour.
Place the dough in a lightly oiled bowl and cover with a clean towel or plastic wrap. Leave it in a warm place for about 1 hour or until the dough doubles in size.
Step 2: Make the Filling
Heat olive oil in a skillet over medium heat. Add the chopped onion and cook for 2–3 minutes until soft and translucent. Stir in the minced garlic and cook for another 30 seconds until fragrant.
Add the chopped spinach and cook until wilted. Stir in the cooked lentils, cumin, paprika, chili flakes, salt, and black pepper. Cook for another 2–3 minutes so the flavors combine well. Remove the skillet from the heat and let the mixture cool slightly. Stir in the feta cheese or mozzarella.
Step 3: Shape the Flatbreads
Punch down the risen dough and divide it into 6 equal portions. Roll each portion into a ball. On a lightly floured surface, roll each ball into a medium-sized circle.
Place a generous spoonful of filling in the center of each circle. Fold the edges inward and pinch tightly to seal. Gently flatten the stuffed dough again using a rolling pin.
Step 4: Cook the Flatbreads
Heat a skillet or griddle over medium heat. Place one flatbread onto the hot skillet and cook for 3–4 minutes on each side until golden brown with beautiful crispy spots. Repeat with the remaining flatbreads.
Step 5: Add Garlic Butter and Serve
Mix the melted butter with garlic powder and parsley. Brush the warm flatbreads generously with the garlic butter mixture.
Serve warm with yogurt, hummus, or a crisp salad for a delicious and satisfying meal.
