Ingredients (Serves 6)
- 8 large eggs
- 1 cup whole or 2% milk
- ½ cup heavy cream (optional, for a richer texture)
- 2 cups fresh spinach, chopped
- 1 cup cherry tomatoes, diced
- 1 cup shredded mozzarella cheese
- ½ cup shredded cheddar cheese
- ¼ cup grated Parmesan cheese
- ½ small onion, finely diced
- 2 cloves garlic, minced
- 1 tsp Italian seasoning
- ½ tsp salt
- ¼ tsp black pepper
- 1 tbsp olive oil
Instructions
- Preheat the oven to 375°F (190°C). Grease a 9-inch pie dish or baking dish.
- Heat olive oil in a skillet over medium heat. Sauté the onion for 3 minutes, then add garlic and spinach. Cook until the spinach is wilted. Remove from heat.
- In a large bowl, whisk together the eggs, milk, heavy cream, Italian seasoning, salt, and black pepper.
- Stir in the mozzarella, cheddar, Parmesan, cooked spinach mixture, and diced tomatoes.
- Pour the mixture into the prepared baking dish and spread evenly.
- Bake for 40–45 minutes, or until the centre is set and the top is lightly golden.
- Let rest for 10 minutes before slicing and serving.
