Instructions
Lightly grease the inside of a slow cooker with cooking spray.
Pour the marinara sauce, tomato paste, chicken broth, minced garlic, Italian seasoning, oregano, basil, and crushed red pepper flakes into the slow cooker. Stir until well combined.
Season both sides of the chicken breasts with salt, black pepper, garlic powder, onion powder, Italian seasoning, and smoked paprika.
Arrange the chicken breasts in a single layer over the marinara sauce, then spoon a little sauce over the tops.
Cover with the lid and cook on LOW for 6–7 hours or HIGH for 3–4 hours, until the chicken is tender and reaches an internal temperature of 165°F (74°C).
Remove the chicken and shred it with two forks, or leave the breasts whole if preferred.
Return the shredded chicken to the slow cooker and stir it into the sauce until evenly coated.
Sprinkle the mozzarella cheese evenly over the top, followed by the Parmesan cheese.
Cover again for 10–15 minutes, or until the cheese is fully melted and bubbly.
Garnish with fresh basil, chopped parsley, and extra Parmesan before serving.
