Ingredients
For the Muffins
- 2 cups all-purpose flour
- 1 tablespoon baking powder
- ½ teaspoon salt
- ½ cup granulated sugar
- 2 large eggs
- 1 cup whole milk
- ½ cup unsalted butter, melted and cooled
- 1 teaspoon vanilla extract
- 1½ cups mixed berries (blueberries, raspberries, blackberries, or diced strawberries)
- 1 tablespoon flour (for coating berries)
For the Vanilla Glaze
- 1 cup powdered sugar
- 2–3 tablespoons milk
- ½ teaspoon vanilla extract
Optional Garnish
- Fresh berries
- Lemon zest
- Powdered sugar for dusting
Instructions
Step 1: Prepare the Oven
Preheat your oven to 375°F (190°C). Line a 12-cup muffin pan with paper liners or lightly grease the muffin cups.
Step 2: Combine Dry Ingredients
In a large mixing bowl, whisk together the flour, baking powder, salt, and granulated sugar until evenly combined.
Step 3: Mix Wet Ingredients
In a separate bowl, whisk together the eggs, milk, melted butter, and vanilla extract until smooth.
Step 4: Make the Batter
Pour the wet ingredients into the dry ingredients. Stir gently until just combined. Avoid overmixing, as this can make the muffins dense instead of fluffy.
Step 5: Add the Berries
Toss the berries with 1 tablespoon of flour. Fold them gently into the batter, being careful not to crush them.
Step 6: Fill the Muffin Pan
Divide the batter evenly among the prepared muffin cups, filling each about three-quarters full.
Step 7: Bake
Bake for 18–22 minutes or until the tops are lightly golden and a toothpick inserted into the center comes out clean.
Step 8: Cool
Allow the muffins to cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.
Step 9: Prepare the Glaze
In a small bowl, whisk together powdered sugar, milk, and vanilla extract until smooth and pourable.
Step 10: Glaze the Muffins
Once the muffins have cooled, drizzle the glaze generously over the tops. Let it set for a few minutes before serving.
Tips & Notes
