 Ingredients

🥒 Vegetable Base

  • 2 medium zucchinis, grated
  • 2 medium potatoes, peeled and grated
  • 2 large eggs
  • ¼ cup milk

  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 teaspoon dried Italian seasoning

  • ½ cup all-purpose flour
  • 1 teaspoon baking powder

  • Chopped parsley

 Instructions

Step 1: Prepare the Vegetables

  • Preheat oven to 375°F (190°C).
  • Grease or line a 12-cup muffin tin.
  • Grate zucchini and potatoes.
  • Place them in a clean kitchen towel and squeeze out as much moisture as possible.

Step 2: Mix the Wet Ingredients

  • In a large bowl, whisk together eggs and milk.

Step 3: Add Vegetables & Seasonings

  • Stir in grated zucchini, potatoes, Parmesan cheese, garlic powder, onion powder, salt, pepper, and Italian seasoning.

Step 4: Add Dry Ingredients

  • Mix in flour and baking powder until combined.
  • Do not overmix.

Step 5: Fill the Muffin Tin

  • Divide the mixture evenly among the muffin cups, filling each about ¾ full.

Step 6: Bake
