Instructions
Step 1: Prepare the Vegetables
- Preheat oven to 375°F (190°C).
- Grease or line a 12-cup muffin tin.
- Grate zucchini and potatoes.
- Place them in a clean kitchen towel and squeeze out as much moisture as possible.
Step 2: Mix the Wet Ingredients
- In a large bowl, whisk together eggs and milk.
Step 3: Add Vegetables & Seasonings
- Stir in grated zucchini, potatoes, Parmesan cheese, garlic powder, onion powder, salt, pepper, and Italian seasoning.
Step 4: Add Dry Ingredients
- Mix in flour and baking powder until combined.
- Do not overmix.
Step 5: Fill the Muffin Tin
- Divide the mixture evenly among the muffin cups, filling each about ¾ full.
Step 6: Bake
- Bake for 25–30 minutes, or until golden brown and crispy on top.
Step 7: Cool & Serve
- Let cool for 5 minutes before removing from the pan.
