Broccoli Cheese Patties
Golden, crispy on the outside, and cheesy on the inside, these broccoli cheese patties are a delicious way to enjoy vegetables. They make a perfect appetiser, snack, or light meal and pair wonderfully with a creamy yoghurt or garlic dipping sauce.
Ingredients (Serves 4)
- 3 cups broccoli florets, finely chopped
- 1 cup shredded cheddar cheese
- 1/3 cup grated Parmesan cheese
- 2 large eggs
- 1/2 cup breadcrumbs (regular or panko)
- 2 cloves garlic, minced
- 2 tbsp chopped parsley
- 1/2 tsp onion powder
- 1/2 tsp paprika
- Salt and black pepper, to taste
- 2 tbsp olive oil (for frying)
Instructions
- Steam the broccoli for 3–4 minutes until just tender. Drain well and finely chop.
- In a large bowl, combine broccoli, cheddar, Parmesan, eggs, breadcrumbs, garlic, parsley, onion powder, paprika, salt, and pepper.
- Mix until the mixture holds together. If too wet, add a little more breadcrumbs.
- Shape into 8 equal patties.
- Heat olive oil in a non-stick skillet over medium heat.
- Cook patties for 3–4 minutes per side until golden brown and crispy.
- Serve warm with ranch, garlic yoghurt sauce, or your favourite dip.

- Drain the broccoli thoroughly to prevent soggy patties.
- Freshly grated cheese melts better than pre-shredded cheese.
