Bacon-Wrapped Potato Wedges
These crispy, smoky bacon-wrapped potato wedges are always the first appetizer to disappear at parties, game nights, and backyard gatherings. Tender seasoned potatoes are wrapped in savory bacon and baked until perfectly crispy on the outside and fluffy on the inside. Serve them with a creamy dipping sauce, and watch them vanish in minutes!
Ingredients
For the Potato Wedges
- 4 medium russet potatoes, scrubbed clean
- 10 slices bacon, cut in half lengthwise
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon smoked paprika
- ½ teaspoon black pepper
- ½ teaspoon salt
- 1 tablespoon chopped fresh parsley (optional)
For the Creamy Dip
- ½ cup sour cream
- ¼ cup mayonnaise
- 1 tablespoon chopped fresh chives
- 1 teaspoon lemon juice
- Salt and pepper to taste
Instructions
Step 1: Prepare the Potatoes
Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or lightly grease it.
Cut each potato into thick wedges, about 6–8 wedges per potato. Place them in a large bowl.
Step 2: Season
Drizzle the olive oil over the wedges. Add garlic powder, onion powder, smoked paprika, salt, and pepper. Toss well until every wedge is evenly coated.
Step 3: Wrap with Bacon
Wrap each potato wedge with a strip of bacon, stretching it slightly as you go. Secure with a toothpick if needed.
Arrange the wrapped wedges on the prepared baking sheet, leaving a little space between each one.
Step 4: Bake
Bake for 35–45 minutes, turning once halfway through cooking. The bacon should be crisp and golden brown, and the potatoes should be fork-tender.
For extra crispiness, broil for 2–3 minutes at the end, keeping a close eye on them.
Step 5: Make the Dip
While the wedges are baking, combine the sour cream, mayonnaise, chives, lemon juice, salt, and pepper in a small bowl. Stir until smooth and creamy.
Step 6: Serve
Remove the wedges from the oven and let them cool for a few minutes. Sprinkle with fresh parsley if desired.
Serve warm with the creamy chive dip on the side.
Tips
- Use thick-cut bacon for extra flavor.
- Add a pinch of cayenne pepper for a spicy kick.
- These can be prepared ahead of time and baked just before guests arrive.
- Try ranch seasoning instead of the spice blend for a different flavor profile.
