Crustless Spinach and Ricotta Quiche
This crustless spinach and ricotta quiche is light, creamy, and packed with protein. Made without a crust, it’s naturally lower in carbs while delivering rich flavour from ricotta, spinach, and Parmesan. Perfect for breakfast, brunch, lunch, or meal prep.
Ingredients (Serves 6)
- 10 oz (280g) frozen chopped spinach, thawed and completely squeezed dry (or 2–3 cups fresh baby spinach, sautéed and wilted)
- 1 cup ricotta cheese
- 5 large eggs, beaten
- 1/3 cup milk or heavy cream
- 1/2 cup grated Parmesan cheese
- 1/2 cup shredded mozzarella cheese
- 1 small onion, finely diced
- 2 cloves garlic, minced
- 1 tbsp olive oil
- 1 tsp Italian seasoning
- 1/4 tsp nutmeg (optional)
- Salt and black pepper, to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat oven to 375°F (190°C). Grease a 9-inch pie dish or baking dish.
- Heat olive oil in a skillet over medium heat. Sauté the onion for 3–4 minutes, then add the garlic and cook for 30 seconds. Stir in the spinach and cook for 2 minutes. Let it cool slightly.
- In a large bowl, whisk together the eggs, ricotta, milk, Parmesan, mozzarella, Italian seasoning, nutmeg, salt, and pepper.
- Fold the spinach mixture into the egg mixture until evenly combined.
- Pour into the prepared baking dish and smooth the top.
- Bake for 35–40 minutes, or until the centre is set and the top is lightly golden.
- Cool for 10 minutes before slicing. Garnish with fresh parsley and serve warm.
Notes
- Squeeze as much moisture as possible from the spinach to prevent a watery quiche.
- Fresh spinach gives a brighter flavour, while frozen is convenient and budget-friendly.
Tips
- Add mushrooms, sun-dried tomatoes, or cooked bacon for extra flavour.
- Store leftovers in the refrigerator for up to 4 days.
- Enjoy warm or cold for easy meal prep.
