  • 3 cups broccoli florets, finely chopped

Instructions

  1. Steam the broccoli for 3–4 minutes until just tender. Drain well and finely chop.
  2. In a large bowl, combine broccoli, cheddar, Parmesan, eggs, breadcrumbs, garlic, parsley, onion powder, paprika, salt, and pepper.
  3. Mix until the mixture holds together. If too wet, add a little more breadcrumbs.
  4. Shape into 8 equal patties.
  5. Heat olive oil in a non-stick skillet over medium heat.
  6. Cook patties for 3–4 minutes per side until golden brown and crispy.
  7. Serve warm with ranch, garlic yoghurt sauce, or your favourite dip.
