Sticky Citrus Rosemary Roasted Chicken
Description
A succulent roasted chicken infused with fresh citrus, aromatic rosemary, and a sticky glaze that caramelises beautifully in the oven. Perfectly tender on the inside with a golden, flavourful crust, this dish is a standout for family dinners or special occasions.
Ingredients
- 1 whole chicken (about 4 lbs)
- 3 tbsp olive oil
- 2 tbsp honey
- 2 tbsp soy sauce
- Zest and juice of 1 lemon
- 3 sprigs fresh rosemary
- 4 garlic cloves, minced
- Salt and black pepper, to taste
- Optional: 1 orange, sliced for roasting
Instructions
- Preheat oven to 400°F (200°C).
- Mix olive oil, honey, soy sauce, lemon juice, zest, garlic, salt, and pepper in a small bowl to create the marinade.
- Rub the chicken inside and out with the marinade. Place rosemary sprigs inside the cavity.
- Arrange chicken in a roasting pan. Optional: place orange slices under and around the chicken.
- Roast for 1 hour 15 minutes, basting with pan juices every 20 minutes.
- Check doneness with a meat thermometer: 165°F (74°C) in the thickest part of the thigh.
- Let the chicken rest 10 minutes before carving. Serve with roasted vegetables or potatoes.
Notes
- Pat the chicken dry before marinating for a crispier skin.
- Basting ensures extra moisture and sticky glaze on the skin.
- Use fresh rosemary for best flavour; dried can be used if needed.
Tips
- For extra caramelisation, broil the chicken for the last 3–5 minutes.
- Save pan drippings for a delicious sauce by adding a splash of chicken broth.
- Marinate overnight for more intense flavour.
