Although they’re often called “zero carb,” the vegetables naturally contain a small amount of carbohydrates, but they’re still much lower in carbs than traditional patties made with flour or breadcrumbs. Packed with protein, vitamins, and fiber, these patties are a nutritious option the whole family can enjoy.
Ingredients
- 2 cups shredded zucchini
- 1 cup grated carrot
- ½ cup green peas
- 3 large eggs
- 2 tablespoons finely chopped onion
- 2 tablespoons olive oil
- 1 teaspoon salt
- ½ teaspoon black pepper
- ½ teaspoon garlic powder
Instructions
Begin by shredding the zucchini and gently squeezing out as much excess moisture as possible using a clean kitchen towel or paper towels. Removing the extra liquid helps the patties hold together and cook evenly.
Place the zucchini into a large mixing bowl and add the grated carrot, green peas, and chopped onion. Stir the vegetables together until evenly combined.
Crack the eggs into the bowl and add the salt, black pepper, and garlic powder. Mix everything thoroughly until the vegetables are evenly coated with the eggs. The mixture should be moist but thick enough to scoop easily.
Heat the olive oil in a large nonstick skillet over medium heat. Once the oil is hot, scoop about two tablespoons of the mixture into the pan for each patty. Gently flatten each one with the back of a spoon or spatula to create even rounds.
Cook for about 3–4 minutes on the first side until golden brown. Carefully flip each patty and continue cooking for another 3–4 minutes until both sides are beautifully browned and the eggs are fully cooked.
Transfer the cooked patties to a plate lined with paper towels if desired, then serve immediately while warm. They pair wonderfully with Greek yogurt, sour cream, avocado slices, fresh herbs, or your favorite dipping sauce.
Tips
For extra flavor, add chopped parsley, dill, chives, or a pinch of paprika. Finely chopped spinach, bell peppers, or mushrooms also make excellent additions. Store leftover patties in an airtight container in the refrigerator for up to 3 days. Reheat them in a skillet or air fryer to restore their crispy exterior.
