Ingredients

  • 4 boneless, skinless chicken breasts or thighs
  • 1 lb baby potatoes, halved or quartered
  • 2 cups broccoli florets

  • 1 zucchini, sliced
  • 3 tablespoons olive oil
  • 1 packet ranch seasoning mix
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika

  • 1 cup shredded cheddar cheese

Instructions

Preheat your oven to 400°F (200°C) or heat an outdoor grill to medium-high heat. Cut four large sheets of aluminum foil and lightly grease each piece with a little olive oil or cooking spray to prevent sticking.

In a large mixing bowl, combine the baby potatoes, broccoli florets, sliced bell pepper, and zucchini. Drizzle with olive oil and sprinkle half of the ranch seasoning, garlic powder, paprika, salt, and black pepper over the vegetables. Toss everything well until evenly coated.
