Ingredients
Cream Cheese Filling
- 16 oz (450g) cream cheese, softened
- ½ cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- ½ cup sour cream
- 2 tbsp all-purpose flour
- Pinch of salt
Cherry Layer
- 2 cups fresh or frozen pitted cherries
- 2 tbsp sugar
- 1 tsp cornstarch
- 1 tbsp lemon juice
- ½ tsp almond extract (optional)
Topping
- 2 tbsp melted butter
- 1 tbsp coarse sugar (optional)
Instructions
Preheat your oven to 350°F (175°C). Lightly grease a 9×9-inch baking dish or a similar casserole dish.
If using fresh cherries, wash, pit, and halve them. If using frozen cherries, thaw and drain any excess liquid.
Place the cherries into a saucepan with the sugar, lemon juice, and cornstarch. Cook over medium heat for about 5–7 minutes, stirring occasionally, until the cherries soften slightly and the juices become lightly thickened. Remove from the heat and allow them to cool.
In a large mixing bowl, beat the softened cream cheese until smooth and fluffy. Add the sugar and continue mixing until creamy. Beat in the eggs one at a time, followed by the vanilla extract, sour cream, flour, and salt. Mix until the filling is silky smooth without any lumps.
Spread half of the cream cheese mixture into the prepared baking dish. Spoon half of the cherry mixture over the top and gently swirl with a butter knife.
Add the remaining cream cheese mixture and smooth the surface with a spatula. Finish by spooning the remaining cherries evenly over the top. Lightly swirl again to create a beautiful marbled effect.
Brush the surface lightly with melted butter and sprinkle with coarse sugar if desired. This gives the dessert a delicate golden finish as it bakes.
Bake for 40–45 minutes, or until the edges are lightly golden and the center is just set with a slight wobble. Avoid overbaking, as the filling will continue to firm up while cooling.
Remove from the oven and let the bake cool at room temperature for about 30 minutes. Transfer it to the refrigerator and chill for at least 3 hours, or overnight for the best texture.
Cut into squares and serve chilled, or warm individual portions slightly in the microwave. This dessert pairs wonderfully with whipped cream, vanilla ice cream, or fresh cherries on top.
Tips
- Always use room-temperature cream cheese for a perfectly smooth filling.
- Fresh cherries provide the best flavor, but frozen cherries work just as well.
- Don’t overmix after adding the eggs to prevent cracks.
- Refrigerating overnight creates an even creamier texture.
- Add a handful of white chocolate chips for extra indulgence.
- A sprinkle of sliced almonds adds a delicious crunch.
- Store leftovers covered in the refrigerator for up to 4 days.
- Freeze individual slices for up to 2 months.
