Ingredients
- 1 cup kidney beans, drained and rinsed
- 1 cup chickpeas, drained and rinsed
- 1 cup black beans, drained and rinsed
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1 red bell pepper, diced
- ¼ cup red onion, finely chopped
- ¼ cup chopped fresh parsley
- 2 tablespoons chopped cilantro (optional)
Dressing
- 3 tablespoons extra virgin olive oil
- 2 tablespoons fresh lemon juice
- 1 tablespoon red wine vinegar
- 1 teaspoon Dijon mustard
- 1 teaspoon honey
- 1 garlic clove, minced
- Salt and black pepper to taste
- ½ teaspoon dried oregano
Instructions
Drain and rinse all three types of beans thoroughly under cold water, then allow them to drain well.
Wash and prepare all the vegetables. Dice the cucumber, bell pepper, and red onion into small, even pieces, and halve the cherry tomatoes. Chop the parsley and cilantro.
In a large mixing bowl, combine the kidney beans, chickpeas, black beans, cucumber, tomatoes, bell pepper, onion, parsley, and cilantro.
In a separate bowl or small jar, whisk together the olive oil, lemon juice, red wine vinegar, Dijon mustard, honey, minced garlic, oregano, salt, and black pepper until smooth and well combined.
Pour the dressing over the bean mixture and gently toss until every ingredient is evenly coated.
Cover the bowl and refrigerate for at least 30 minutes before serving. This resting time allows the beans to absorb the dressing and enhances the overall flavor.
Before serving, toss the salad once more and adjust the seasoning if needed. Garnish with extra parsley, cilantro, or a squeeze of fresh lemon juice.
Tips
- Chill the salad for an hour for the best flavor.
- Add diced avocado just before serving.
- Crumbled feta cheese makes a delicious addition.
- Use fresh herbs for maximum freshness.
- Store leftovers in an airtight container for up to 4 days.
