Ingredients
- 1 pound (450g) cheese ravioli (fresh or frozen)
- 1 bunch asparagus, trimmed and cut into 2-inch pieces
- 1½ cups cherry tomatoes, halved
- 4 garlic cloves, minced
- 2 tablespoons olive oil
- 2 tablespoons unsalted butter
- 1 teaspoon Italian seasoning
- ½ teaspoon salt, or to taste
- ¼ teaspoon black pepper
- ¼ teaspoon red pepper flakes (optional)
- ¼ cup freshly grated Parmesan cheese
- 2 tablespoons chopped fresh parsley
- 1 tablespoon chopped fresh basil
- Fresh lemon juice from ½ lemon (optional)
Instructions
Step 1: Cook the Ravioli
Bring a large pot of salted water to a boil. Add the ravioli and cook according to the package instructions, usually 3–5 minutes for fresh ravioli or slightly longer for frozen. Reserve ¼ cup of pasta water, then drain and set aside.
Step 2: Cook the Asparagus
Heat olive oil and butter in a large skillet over medium heat. Add the asparagus pieces and sauté for 3–4 minutes until bright green and tender-crisp.
Step 3: Add Garlic and Tomatoes
Stir in the minced garlic and cook for about 30 seconds until fragrant. Add the cherry tomatoes and cook for another 3–4 minutes. The tomatoes will begin to soften and release their juices, creating a light sauce.
Step 4: Season the Dish
Add Italian seasoning, salt, black pepper, and red pepper flakes if desired. Stir everything together until well combined.
Step 5: Combine with Ravioli
Add the cooked ravioli to the skillet. Gently toss to coat with the tomato and garlic mixture. If the sauce seems dry, add a few tablespoons of the reserved pasta water to create a silky consistency.
Step 6: Finish and Serve
Remove from the heat and stir in the fresh parsley and basil. Squeeze in a little lemon juice for brightness if desired. Sprinkle generously with Parmesan cheese and serve immediately.
Tips
- Do not overcook the ravioli, as it can become too soft and break apart.
- Add grilled chicken or shrimp for extra protein.
- Substitute spinach for asparagus if desired.
- Use a mix of yellow and red cherry tomatoes for an even more colorful presentation.
